Sweet Potato Breakfast Casserole

Ingredients

  • 16 oz. Jimmy Dean hot breakfast sausage
  • 1 pound sweet potatoes, shredded
  • 2 tbls. brown sugar
  • ¼ tsp. curry powder
  • Scant ¼ tsp. nutmeg
  • ¼ cup melted butter
  • ½ cup chopped onion
  • 8 eggs lightly beaten
  • 16 oz. ricotta cheese
  • 8 oz. cheddar cheese grated
  • 8 oz. mozzarella chopped
  • 1 cup fresh spinach, chopped
  • ¼ tsp. salt and ¼ tsp. ground pepper

Directions

  1. Preheat oven to 375 degrees. Spray a 9X13 inch casserole with Pam.
  2. In a skillet, cook sausage until evenly browned and crumbled about 10 minutes. Set aside.
  3. Add onion to same skillet and cook slowly until onion had softened.
  4. In mixing bowl, stir together sweet potatoes, brown sugar, curry, nutmeg and melted butter. Press into bottom of prepared casserole.
  5. Stir together eggs, ricotta shredded cheddar cheese, mozzarella, spinach, onion, salt and pepper and sausage.
  6. Pour egg mixture over sweet potatoes.
  7. Bake about 40 minutes until top is golden brown and eggs are set.
  8. Cool 10 minutes before cutting into squares.
