Spiced Plum Cake

Serves 8

Ingredients

  • ½ cup room temperature butter
  • ¾ cup plus 3 tbls. sugar
  • 2 eggs
  • 1 tbls. lemon juice
  • 1 ½ tsp freshly grated lemon rind
  • 1 ¼ cups flour
  • 6 plums ( about 2 lbs.) halved and cut into 8 slices
  • ¾ tsp. cinnamon
  • 2 tbls. brown sugar
  • Cool whip stirred with 1 tbls. brown sugar

Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 9” round glass dish.
  3. Using electric mixer, beat ½ cup softened butter until fluffy.
  4. Add sugar and beat until combined.
  5. Beat in eggs, one at a time, then lemon juice and rind.
  6. Add flour and beat until smooth. Spread in prepared dish.
  7. Arrange plum slices in concentric circles to completely cover batter.
  8. Mix 3 tbls. sugar. 2 tbls. brown sugar and cinnamon and sprinkle over cake.
  9. Bake until cake is golden brown and toothpick inserted in middle comes out clean, about 35 minutes.
  10. Cut into wedges and serve with whipped cream.
