Broccoli Spoonbread

Ingredients

Serves 6

  • 1 package frozen chopped broccoli
  • 2 beaten eggs
  • 1 cup sour cream
  • 1 stick butter, melted
  • 1/4 teaspoon salt
  • 2 cups half and half
  • 1 box Jiffy corn muffin mix
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat oven to 350 degrees.
  2. Cook broccoli in microwave for three minutes, drain.
  3. Mix eggs, sour cream, butter, salt, half and half, and muffin mix.
  4. Add drained broccoli.
  5. Top with cheese.
  6. Pour into a round soufflé dish.
  7. Bake 35-45 minutes until puffed and firm.
  8. Serve with butter.
